Matcha (Japanese for "powdered tea") is a special green tea (Tencha) that is ground to a fine powder in stone mills. Matcha is used in the Japanese tea ceremony. It has an intense green color and a lovely sweetish, sometimes slightly bitter taste. The tea contains many catechins as well as carotenes and vitamins A, B, C and E. For the production of matcha, the tea bushes are shaded about four weeks before the harvest. This creates an extremely delicate, dark green leaf. After the harvest, the tea leaves are steamed, dried and, after all coarse leaf vessels have been removed, ground.
Matcha quickly loses quality due to oxidation in contact with oxygen and should therefore be consumed as quickly as possible. Storage in the refrigerator and airtight packaging (such as our resealable Zip-Lock Bag) will extend the life of the tea.
